The bò bún or bún bò nam bộ ((bún thịt bò, in vietnamese, bò « beef », bún « rice vermicelli », and nam bộ « southern region of Vietnam »), is a traditional Vietnamese recipe with a variety of variations, rice vermicelli servet at room temperature, of beef, raw vegetables, aromatic herbs, and sweet-and-sour fish sauce. The traditional bò bún (or bún bò nam bộ) is a native to southern Vietnam. This dish is a variant of the soup bún bò Huế (from Hué in central Vietnam) or phở xào and phở of northern Viêt Nam. In Vietnam, spring rolls are eaten as an aperitif or as a starter with meals. In some regions of country, it can also be prepared with fried white fish, accompanied by mint leaves and a thin slice of pineapple.
